Pie with jam. Recipes for the most delicious jam pies A simple way to make a pie with jam at home

Quick pies with jam are always a popular topic. When time is short and you want something sweet, they are irreplaceable. Fortunately, there are jars of jam in every home, and the only question is what technology we use to prepare a quick pie. Cooking “quickly” means that you don’t have to fuss with the dough for a long time, and the oven will bake the product for no more than an hour. If the dough is not only light, but also interesting, then the recipe has no price!

Today I will show you two pies at once. One is made like a sponge cake with milk (not a classic sponge cake, but a very similar dough), and the second is made with kefir dough. The filling is jam in both the first and second cases: cherry plum and red currant. Both one recipe and the other are given with step-by-step photos to make it easier for any novice housewife to understand and reproduce.

Quick pie with cherry plum jam

An airy and incredibly tasty pie is baked from dough with milk and vegetable oil. The taste of the baked goods resembles a juicy sponge cake, which does not need soaking at all. An appetizing pie filled with thick jam delights with the refreshing notes of cherry plum and the delicate texture of the baked dough. This sunny treat, shimmering with amber colors and fragrant with the aroma of vanilla and cherry plum, is not a shame to offer even to the festive table, pleasantly surprising dear guests. This jam pie can be whipped up with any thick jam, marmalade or a layer of fresh fruit or berries, such as bananas, pears or cherries.

Recipe Ingredients

for test:

  • egg 3 pcs
  • milk 200 ml
  • vegetable oil 90 ml
  • flour 400 g
  • sugar 200 g
  • baking powder 1.5-2 tsp.
  • salt 0.5 tsp.
  • vanillin to taste

For filling:

  • cherry plum jam (thick) 1-1.5 tbsp.

How to make a milk sponge cake filled with thick jam

Turn on the oven and set the temperature to 180 degrees Celsius. The egg used for baking is chilled. Take a deep bowl to prepare the dough. Ceramic cookware is best. Break the egg into it and lightly beat until smooth. Continue whisking, adding sugar one tablespoon at a time until the grains are completely dissolved. During this time, the mass will turn white and increase significantly in volume. Salt the dough to taste and add vanillin. Pour in vegetable oil in small portions, gradually whisking it into the egg mixture. Dilute the dough with milk and mix lightly. The mass will become liquid and bubble, but that’s how it should be.

Add sifted flour and baking powder to the dough. Carefully break up all lumps. The mass should become homogeneous and slightly thicker than biscuit dough. If necessary, add flour. Dough that is too liquid is not suitable for baked goods with filling. The jam will simply drown in it, and the pie will be unappetizing when cut.

Pour the baking dish with vegetable oil and cover it with paper, which is treated with oil and sprinkled with flour. Spread half of the batter into the prepared pan. Place the filling into the future pie. Place the pre-liquid jam onto a sieve. After a few minutes, the excess syrup will drain and the jam will become thick.

Cover the filling with the remaining dough, spreading it evenly with a tablespoon and smoothing it over the baking surface.

Place the quick pie in the preheated oven for 7 minutes. Next, you should reduce the temperature to 160 degrees and bake the product for another 40-45 minutes. The finished pie should bake evenly and rise well, having a light crust and an appetizing color. Remove the cake from the oven and sprinkle with powdered sugar if desired.

Serve the pie with cherry plum jam well cooled, cutting into small portions.

Quick pie with currant jam

Even a novice cook can prepare a tender and quick pie with redcurrant jam. When kneading a simple kefir dough, you do not need a mixer. A regular whisk is enough for whisking. The composition of baking ingredients is well balanced and the dough does not require long kneading.

If you have been looking for a long time for a successful dough for quick cupcakes or pies, then you can safely stop searching and prepare this simple and very tasty delicacy - a juicy pie with jam. For filling in baked goods, you can use not only thick jam or marmalade. For a fragrant pie, you can take your favorite fresh fruits or berries. The universal dough does not spread even with a juicy filling, and the dish turns out excellent.

Recipe Ingredients

for test:

  • kefir – 220 ml
  • egg – 3 pcs.
  • vegetable oil – 100 g
  • sugar – 220 g
  • flour – 420 g
  • baking powder – 1.5 tsp.
  • salt - to taste
  • vanillin - to taste

For filling:

  • red currant jam – 220 g

How to make a pie with redcurrant jam

Preheat the oven to 180 degrees Celsius and start working with the dough. To do this, break the egg into a deep and dry bowl. Beat the egg with a whisk until fluffy, without separating the yolks from the whites. Add, spoon by spoon, sugar and salt to taste. Beat the mixture until the sugar dissolves.

Add vegetable oil to the dough, pouring in a thin stream, and mix it thoroughly. Next, pour in the cooled kefir. You can use a fermented milk product that is not fresh. Mix the ingredients well.

Sift the flour several times and carefully add it to the dough along with vanilla and baking powder. The finished mass should be thick, somewhat denser than for baking a sponge cake.

Cover a deep pie pan with paper, after greasing it on both sides with vegetable oil. Coat the bottom and sides of the pan with a light layer of flour.

Spread half of the dough over the bottom of the pan.

Place the filling. Try to pour the jam evenly and smooth it out a little.

Cover the jam with a layer of dough, placing it in small portions and spreading it over the surface of the pie.

Reduce the oven temperature to 160 degrees and bake the product for about 50 minutes. The cooking time for the pie depends on the oven. With an electric oven using top and bottom heating at the same time, the cake is ready in 40-45 minutes. A well-baked product springs slightly under light hand pressure and has an evenly browned crust. You can check the baked goods the old fashioned way with a dry match or toothpick. If the pie is baked, the match will come out dry and without grains of dough.

Cool the product without removing it from the mold, and then just cut it for serving.

Pie was invented a long, long time ago. If you believe historical information, you can find out that this dessert comes from ancient Egypt and is called “Fytyr”. They baked it there with a filling of nuts and raisins.

In Rus', pies played the role of invitations - they were sent to guests, thereby inviting guests to the holidays. At the actual celebration, pies were prepared for each guest. Particular attention was paid to godparents - they were served pies with jam, which were considered one of the most delicious types of this pastry.

Jam pie (classic)

This is the easiest recipe for making jam pie in the oven. Cut butter or margarine and melt it in a small saucepan. Add eggs and sugar to it, beat or mix it all until smooth.

Then you need to mix the flour with baking powder or slaked soda, and then start adding it to the mixture of eggs and butter.

Flour should be sprinkled a little at a time, immediately mixing it with the egg-butter mixture, so that the dough turns out less steep and softer when baking. The resulting dough must be kneaded until it becomes elastic and soft.

After this, the dough must be divided into two parts so that one is slightly larger and the other, naturally, smaller. The smaller portion should be placed in the freezer for an hour. Next, you need to grease the baking dish and sprinkle it with flour, then lay out the dough.

After this, you need to take the jam and distribute it evenly over the dough in the mold. Then we take out the dough that was in the freezer and grate it on a coarse grater. Pour the resulting crumbs evenly over the jam.

The pie should be baked in an oven preheated to 200 degrees for half an hour.

Pie with kefir jam

Cooking time – 50 minutes. Calorie content – 220 kcal.

You need to break the eggs into a deep bowl and beat them with a mixer. Then add sugar and salt and beat again to form a dense white mass. Continuing to beat the mixture, slowly pour in the vegetable oil. Pour kefir, cooled in advance in the refrigerator, into it and beat until smooth.

After these manipulations, you need to add baking powder and beat with a mixer again. When whipping, do not get carried away - the dough will quickly thicken. The resulting mass should be viscous and thick. It should flow, but not be too liquid.

After this you can grease the mold. Then you need to pour the dough into it and smooth it out with a spoon. Jam is placed on top of the spoon, which also needs to be leveled. Then you need to lay the dough again and smooth it out.

After this, you need to preheat the oven to 180 degrees, put the cake there and reduce the temperature to 160. Approximate baking time is 50 minutes.

Quick shortbread pie with jam

Cooking time – 25-30 minutes. Calorie content – 351 kcal.

You need to grate the butter and mix it with half the flour. Then you need to add vanilla sugar, regular sugar and salt. Afterwards, you need to beat the egg separately, add it to the flour and stir until smooth. Next, you need to add the rest of the flour and baking powder, then stir again and knead the resulting dough.

The dough should be elastic and soft, but should not spread. It should not be divided into two parts, so that one becomes larger and the other smaller. The smaller part should be placed in the freezer for half an hour.

Then you should grease the mold and place a larger piece of dough evenly along the bottom. Pour or lay out jam on top and smooth it out with a spoon.

Then you need to grate a smaller piece of dough on a coarse grater and sprinkle the resulting pieces with jam.

The oven needs to be preheated to 180 degrees and place the pie in it for 25-30 minutes.

Yeast pie with jam in the oven

Cooking time – 30 minutes of baking + 1 hour 20 minutes. preparation. Calorie content – 280 kcal.

First you need to warm up the milk a little so that it is approximately room temperature. Next you need to add yeast and stir until smooth. Then add salt and sugar to the resulting mass and mix again. Now we set all this aside to allow the yeast to activate.

After some time, add the egg there and mix thoroughly. Then, without ceasing to stir, add flour a little at a time. Next, take the resulting dough and knead it on the table, the surface of which we sprinkle with flour in advance, otherwise the dough will stick.

After all these steps, you need to put the dough in a deep, wide bowl and cover with something. The dough should rest for about 40 minutes. During this time, the dough will rise, after which it will need to be kneaded again and put there in the same place for the same time.

Then separate the fourth part from the dough and put it aside. Place the remaining dough on the greased pan and carefully level it out. Then spoon the jam on top and smooth it out. We take the set aside part of the dough and make oblong flat lines out of it, with which we need to lay a mesh on top of the jam.

After decorating the pie, place it in the oven, preheated to 190-200 degrees. Bake the yeast dough pie with jam in the oven for about half an hour.

Fytyr in Egyptian

Cooking time – 30 minutes. Calorie content – 265 kcal.

First you need to warm the milk to room temperature, then add yeast to it and let it sit so that the yeast is activated.

Add egg and salt to the resulting mass.

Mix all this until smooth and, without ceasing to stir, add flour.

Knead the resulting dough. It will turn out not sticky and cool.

Divide this dough into two parts and roll them out thinly, but not too much - the dough should not tear.

After this, grease the layers of dough with butter and roll both flat cakes into a roll.

The roll itself needs to be wrapped in a snail.

The resulting snails should be placed individually in plastic bags and refrigerated for 2 hours.

While the dough is in the refrigerator, you need to prepare the cream. Break the egg into a deep bowl and mix with it regular sugar, vanilla, starch and half a glass of milk. All this needs to be mixed until smooth.

Next, we take the yeast-raised snails out of the refrigerator and roll them into round cakes so that they can fit in the baking dish. Place the first cake in the mold so that there are high sides, otherwise the cream will overflow.

Then pour the cooled cream on top and cover with the second flatbread, folding the edges under the first sheet. After this, you need to pierce the top layer with a fork so that air can escape during baking.

Bake in the oven at 200 degrees for half an hour.

  1. Pies should be served cooled - they taste better this way. There is, however, an exception - the Fytyr pie is best eaten warm;
  2. Pies are most often made in a round shape - this is considered the traditional form of this dish, but no one is stopping you from improvising;
  3. Bake in the oven on either the lowest or medium setting at the proper temperature;
  4. If the pie filling is wet, then you should bake it a little longer and on the lower level, so the dessert will be baked for sure;
  5. Always follow the recipe.

Enjoy your tea with fragrant homemade cakes!

On dull and gray rainy days, you really want to please yourself with a mug of hot tea or coffee with aromatic pastries. In order not to invent baking using expensive ingredients, just bake shortbread pie with jam in the oven! I am sure that any housewife will definitely have it in her pantry.

To create a dessert, any sweet preserve in the form of jam or jam is suitable, but I had red currant jam on hand. Juicy, bright, with a slight sourness - it is just perfect for sweet shortbread dough!

By the way, the minimum of ingredients makes such baked goods very popular and relevant, especially for housewives.

To prepare the shortbread dough, first melt the butter in the microwave. If such a unit is not available, then melt it in a water bath, but without bringing it to a boil. Let the oil cool slightly.

Break the eggs into a container and whisk them with sugar and a pinch of salt. Then pour the egg mixture into the melted butter and mix.

Let's extinguish the soda with vinegar - without it, the shortbread dough will turn into a tight lump and will not bake well, and the soda will give it airiness and fluffiness.

Add flour and knead into a plastic shortbread dough.

It easily turns into a yellow ball and practically does not stick to your hands. Many people recommend placing the dough in the refrigerator for 15 minutes at this stage, but this is optional.

I immediately distribute the dough onto a baking sheet, which doesn’t even need to be greased - the dough already contains oil. Be sure to use your fingers to make a border so that the jam will not spill out during baking.

Pour jam into the middle of the mold and spread it over the entire dough, excluding the sides. Place the mold in a preheated oven for 25 minutes at 180C.

The finished shortbread pie with jam has rosy and golden sides, a dizzying aroma and a colorful color! By the way, the cake holds its shape perfectly.

Let the pie cool slightly so that the jam thickens slightly, and then cut it into portions.

Serve the oven-baked pie with jam along with a hot drink.

Enjoy your meal!

At least once, every housewife will need a recipe for a quick jam pie. The reasons can be any - guests suddenly arrived or you need to prepare something for tea, but you don’t want to fuss around for a long time.
