Beef stew with prunes, onions and tomato puree. Stewed meat with prunes: a recipe for an original dish. Beef stewed with prunes: with carrots

The result of a finished meat dish largely depends on the correctly selected ingredients. Even an ordinary roast will acquire a piquant taste if you add some spices or fruits to the standard set of vegetables. For example, prunes.

  • It is better to take young beef for this dish. It will cook faster, it will be softer and juicier. The meat can be cut into small or large pieces - 2-3 pieces per serving. If you do end up with old beef, first marinate it in a weak solution of vinegar or lemon juice. Experienced gourmets recommend marinating beef in light wine. It goes well with both onions and prunes.
  • Thanks to prunes, beef acquires a sweet and sour taste and a subtle fruity aroma. Therefore, in addition to prunes, you should not add strong-smelling vegetables and herbs that would interrupt its taste. Even carrots are added only if they are a favorite among other vegetables.
  • Onions go well with beef and prunes. The taste of the dish will only benefit from this.
  • Beef can be stewed in a light gravy or by adding tomato paste to get a red sauce.
  • The sauce can be thin or thick. It all depends on how much water you pour into the fried meat. If you like a thick sauce, then before putting the pieces of meat in a frying pan or in a cauldron, roll them in flour or starch.
  • Prunes must be of good quality, elastic, and not dry. It is added at the very end of stewing, when the meat becomes soft. If you put prunes ahead of time, they will boil and lose their shape due to prolonged heat treatment.
  • Beef stewed with prunes can be cooked in a frying pan, any thick-walled container, microwave or slow cooker.

The dish is so rich in flavors and aromas that, despite its ordinariness, it can successfully claim the main place on the festive table. When we say “prunes,” we mean dried fruit, but do you know that very tasty meat can be obtained with fresh plums? Therefore, today there are two recipes for you with photos of beef stewed with prunes - dried and fresh. Both were prepared by our authors, so below you will see not only step-by-step photos of the cooking processes, but also receive guaranteed proven recipes.

Beef with prunes: recipe with photos step by step

This recipe can be considered basic, since the components of the dish, in addition to the main ones - beef and prunes, will only contain onions, tomatoes and spices. The taste of the dish is very rich, the gravy is thick, just a little sweet and sour. If this doesn’t seem enough to you, you can supplement the dish with carrots, nuts (walnuts would be ideal), and dried apricots. In some cases, they add potatoes and call it stew... It seems to me that potatoes will forgive the dish, kill its “zest”, turning it into an ordinary “second”. Instead, cook potatoes as a side dish - mashed or boiled and it will be better.

What we need for 4-6 servings:

  • beef (pulp) – 500g;
  • onions – 1-2 heads;
  • prunes – 200g;
  • vegetable oil – 50ml;
  • tomato paste – 1 tbsp;
  • spices for meat – 1 tsp;
  • dried ground paprika – 1 tsp;
  • salt – 1 tsp. without a slide or to taste.

How to cook beef with prunes

  1. We wash the meat, peel it from films and cut it into fairly large pieces of the same size.
  2. We clean the onion and cut it into cubes, the size is not important to us.
  3. We simply wash the prunes. It’s better for us to take seedless ones so as not to bother with taking them out. If the prunes are large, you can cut them in half. If you want the sauce - gravy to contain only small pieces and become thicker - chop finely.
  4. Pour oil into a frying pan, heat it very well and add the beef. You need to fry it in parts so that the pieces in the pan are not crowded, and each one is well fried to a crust on all sides. There is no need to fry until fully cooked, we just need to get a crust.
  5. As soon as we receive it, we immediately remove the portion of beef from the pan into a bowl and set it aside for now.
  6. Add the onion to the same frying pan with the same oil. We sauté it, stirring frequently, to collect all the meat juices and small “roasts” remaining from the beef. 2 minutes is enough.
  7. Add tomato paste, stir and continue frying. After frying, the tomato will retain the intensity of its color in the finished dish.
  8. Return the meat to the pan. Salt and add spices. Mix.

  9. 1 minute is enough and you can pour boiling water from the kettle. The amount of water should be such that it almost completely covers the pieces of meat. Reduce the heat, cover with a lid and simmer until the meat is soft. By the way, if you wish, you can pour 50 ml of dry red wine. The taste will be even richer.
  10. When it is ready, add the prunes, simmer everything together for another 10-15 minutes and turn off. If, when adding prunes, you feel that there is not enough sauce in the dish, add a little more water.

Beef stew with prunes or roast, or goulash, as you prefer, sprinkle with finely chopped fresh herbs in a plate and serve with a potato side dish.

Beef stew with fresh prunes: step-by-step recipe

This cooking option may seem unusual to some, but it is definitely worth trying. The dish will have a very bright, much brighter aroma and taste than in the case of dried fruits. By adding hot pepper and fragrant basil, you will get very spicy meat with a thick gravy. This recipe also uses pork along with beef. This is not a mandatory point, you don't have to do it. If you still decide to repeat one on one, then I will say that pork is needed to make the dish more juicy and we give it a little of our fat, the one that the dryish beef lacks.

Ingredients for 3-4 servings:

  • beef - 250g;
  • pork with fat - 250g;
  • sunflower oil - 70ml;
  • onion - 400g;
  • chili pepper - 1 pc;
  • plum - 400g;
  • khmeli-suneli seasoning - 1 tbsp;
  • fresh basil - 1/2 bunch;
  • fresh dill - 1/2 bunch;
  • fresh parsley - 1/2 bunch;
  • garlic – 3-5 cloves;
  • salt - to taste.
